Garlicky Yogurt Topped With Fried Eggs And Roasted Tomatoes

Ingredients

  • 2 garlic cloves, crushed
  • 1 cup Athina Original Greek yogurt
  • 4 eggs
  • 1 tablespoon butter
  • Dash of Aleppo pepper
  • Dash of smoked paprika
  • ¼ cup cherry tomatoes
  • Oil, for cooking
  • Salt, to taste

 

Method

 

  1. In a small bowl, combine the crushed garlic and Greek yogurt. Season with salt to taste. Divide the yogurt into two bowls.
  2. Heat oil in a pan over medium heat. Add the cherry tomatoes and cook over medium heat until softened and beginning to burst, about 10-15 minutes.
  3. In a separate pan, melt the butter and add the aleppo pepper and smoked paprika. Set aside.
  4. In another pan over medium heat, heat oil and fry the eggs one at a time until the whites have set and the yolks are still runny (about 4-5 minutes).
  5. Top each bowl of yogurt with the cherry tomatoes, eggs and infused butter.
