Garlicky Yogurt Topped With Fried Eggs And Roasted Tomatoes

Ingredients
- 2 garlic cloves, crushed
- 1 cup Athina Original Greek yogurt
- 4 eggs
- 1 tablespoon butter
- Dash of Aleppo pepper
- Dash of smoked paprika
- ¼ cup cherry tomatoes
- Oil, for cooking
- Salt, to taste
Method
- In a small bowl, combine the crushed garlic and Greek yogurt. Season with salt to taste. Divide the yogurt into two bowls.
- Heat oil in a pan over medium heat. Add the cherry tomatoes and cook over medium heat until softened and beginning to burst, about 10-15 minutes.
- In a separate pan, melt the butter and add the aleppo pepper and smoked paprika. Set aside.
- In another pan over medium heat, heat oil and fry the eggs one at a time until the whites have set and the yolks are still runny (about 4-5 minutes).
- Top each bowl of yogurt with the cherry tomatoes, eggs and infused butter.
