Easy Cream Of Broccoli Soup

Ingredients

  • 1tbspolive oil
  • ½yellow onion,diced
  • 2carrots,diced
  • 2heads broccoli crowns(roughly 8 cups), chopped
  • 3cupschicken broth
  • 1tspsea salt
  • ½tspground black pepper
  • ⅓cupparmesan cheese,grated
  • ¼cup Athina Original Greek Yogurt

 

Method

  1. Heat the olive oil in a large, deep stock pot over medium-high heat.
  2. Add the onion and carrot and cook until tender, about 4-6 minutes.
  3. Add the broccoli, chicken broth, salt, pepper, and parmesan cheese and cook, covered, for 15-20 minutes, or until broccoli is completely tender.
  4. Use an hand blender to completely puree the broccoli soup mixture.
  5. Once pureed, add Athina Original Greek Yogurt and stir to incorporate.
  6. Heat through before serving.
