Chocolate Chip Zucchini Bread

Servings : 12 slices


Ingredients:

 

4 eggs

1 cup light brown sugar

1 teaspoon vanilla extract

170g Athina Original Greek Yogurt

170g applesauce, unsweetened

½ cup canola oil

2 cups zucchini, skins washed and grated

3½ cups all-purpose flour

1½ teaspoons baking soda

1½ teaspoons salt

1 teaspoon baking powder

½ cup chocolate chips



Method :

 

  1. Preheat oven to 175°
  2. In a big bowl, cream together the eggs, sugar, vanilla extract, Athina Original Greek Yogurt, applesauce and canola oil until well blended.
  3. In a separate bowl, mix together with the flour, baking soda, salt and baking powder.
  4. Add the dry ingredients to the egg mixture, mix well, and then add in the zucchini and chocolate chips.
  5. Spray two separate loaf pan with cooking spray and distribute the batter into both of them (It should only come up ½ - ¾ up the side of the pan).
  6. Bake for 55-60 minutes or until a toothpick comes out clean.  Let cool and slice.
