Chocolate Chip Zucchini Bread

Servings : 12 slices
Ingredients:
4 eggs
1 cup light brown sugar
1 teaspoon vanilla extract
170g Athina Original Greek Yogurt
170g applesauce, unsweetened
½ cup canola oil
2 cups zucchini, skins washed and grated
3½ cups all-purpose flour
1½ teaspoons baking soda
1½ teaspoons salt
1 teaspoon baking powder
½ cup chocolate chips
Method :
- Preheat oven to 175°
- In a big bowl, cream together the eggs, sugar, vanilla extract, Athina Original Greek Yogurt, applesauce and canola oil until well blended.
- In a separate bowl, mix together with the flour, baking soda, salt and baking powder.
- Add the dry ingredients to the egg mixture, mix well, and then add in the zucchini and chocolate chips.
- Spray two separate loaf pan with cooking spray and distribute the batter into both of them (It should only come up ½ - ¾ up the side of the pan).
- Bake for 55-60 minutes or until a toothpick comes out clean. Let cool and slice.
