Falafel Salad with Spicy Yogurt Sauce

Ingredients
SPICY YOGURT SAUCE
- 1 cup Athina Original Greek yogurt
- Juice of 1 lemon
- Pinch of salt
- 2 tablespoons Sriracha, or more to taste
- 1 teaspoon smoked paprika
SALAD
- 1 bunch green-leaf lettuce, cored and chopped
- 1 head radicchio, cored and chopped
- 1 cucumber, seeded and chopped
- 280g cherry tomatoes, quartered
- ½ red onion, chopped
- 1 garlic clove, minced
- ½ cup chopped parsley
- ½ cup chopped cilantro
- ¼ cup chopped mint
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
- 16 homemade falafel(or premade)
Method
- MAKE THE YOGURT SAUCE:In a small bowl, stir the yogurt with the lemon juice and salt to combine. Add the Sriracha and paprika. Stir in ¼ cup water (or more, if needed) to achieve a thin, easy-to-drizzle consistency.
- MAKE THE SALAD:In a large bowl, toss the lettuce and radicchio to combine.
- In a medium bowl, toss the cucumber, tomatoes, red onion, garlic, parsley, cilantro and mint to combine. Add the olive oil and season with salt and pepper.
- To serve, pile a quarter of the lettuce mixture onto a plate, then top with about ½ cup of the cucumber-tomato mixture. Top with 4 falafel patties and drizzle generously with yogurt sauce. Repeat with the remaining portions. Serve immediately.
