Dark Chocolate Greek Yogurt Mousse

Servings : 4-6



Ingredients :

 

250g quality dark chocolate, broken into chunks

500g Athina 0% Fat Greek Yogurt

3 tablespoons sugar

1 teaspoon natural vanilla extract

¼ cup low fat fresh milk



Method :

 

  1. Put chocolate chunks in a microwave-safe bowl. Microwave on high for 1 minute, and then stir.  Microwave for 30 seconds, stir until melted.  If it is still not melted, repeat microwave 30 seconds and stir, until the chunks in the chocolate are melted.
  2. Put Athina 0% Fat Greek Yogurt in a medium mixing bowl, whip the Greek yogurt with an electric mixer until fluffy. Add the sugar, natural vanilla extract and milk and beat some more, then add the chocolate, a bit at a time, beating in between additions.  Mousse is done.
  3. You can pour the mousse directly into small serving cups, adding other ingredients to make parfaits or into a little chocolate cup with fresh fruit garnish. It would make a beautiful cake filling too.
