Dark Chocolate Greek Yogurt Mousse

Ingredients :
250g quality dark chocolate, broken into chunks
500g Athina 0% Fat Greek Yogurt
3 tablespoons sugar
1 teaspoon natural vanilla extract
¼ cup low fat fresh milk
Method :
- Put chocolate chunks in a microwave-safe bowl. Microwave on high for 1 minute, and then stir. Microwave for 30 seconds, stir until melted. If it is still not melted, repeat microwave 30 seconds and stir, until the chunks in the chocolate are melted.
- Put Athina 0% Fat Greek Yogurt in a medium mixing bowl, whip the Greek yogurt with an electric mixer until fluffy. Add the sugar, natural vanilla extract and milk and beat some more, then add the chocolate, a bit at a time, beating in between additions. Mousse is done.
- You can pour the mousse directly into small serving cups, adding other ingredients to make parfaits or into a little chocolate cup with fresh fruit garnish. It would make a beautiful cake filling too.
